Ingredients

Instructions
Add the flour, sugar, baking powder, salt and the butter into a food processor and blitz till till it reaches a coarse texture.
Put this mix in a large bowl and add milk, lemon zest, vanilla extract and currants and mix till combined.
Grease the pudding mold and put a tin foil at the bottom of the mold.
Now pour in the batter and close the lid.
Put the mold halfway in boiling water.
Put the stove on a simmer and leave the pudding to cook for 90 minutes.
After removing the pudding from the water, keep it aside for 15 minutes.
Slice the pudding and serve with some delicious custard.
