Gluten Free/Dairy Free Lemon Berry Muffins

  1. Preheat oven to 375’F (190’C).
  2. Whip eggs until light and frothy. Add milk, oil, zest, and vanilla, then mix.
  3. In separate bowl measure out dry ingredients and blend.
  4. Slowly add dry to wet and mix until smooth batter is formed.
  5. Add berries and incorporate into batter.
  6. Place batter in lined muffin tins.
  7. Bake for 25 to 30 minutes.
