Gajar Ka Halwa Recipe (Hindi)


In addition to all the holiday food – and pie – the winter months also bring in tow a number of yummy seasonal fruits and vegetables. For instance, Brussels sprouts and carrots. And while recipes with Brussels Sprouts may not work out for the best, there is hardly any way that you could go wrong with good ol’ gaajar (carrot). Our favourite carrot recipe, without a doubt, happens to be the classic gajar ka halwa (Indian carrot soufflé), and here’s a recipe that can explain why.

Gajar Ka Halwa Recipe (Hindi)
Grated carrots slow cooked in milk, sugar, and ghee.
  1. गाजर को छील कर घिस लें। अब उसे इलाईची के साथ दुध में डाल कर उबाल पर पकाँए जब तक मिश्रण गाढ़ा हो जाए।
  2. कढ़ाई में घी गरम करके गाजर-दूध के मिश्रण को धीमी आग पर १०-१५ मिनट के लिए पकाँए।
  3. चीनी मिलाकर कुच्छ देर और पकाँए, जब तक गाजर का रंग गाढ़ा हो जाए।
  4. आखिर में, किशमिश व बादाम मिलाकर परोसें।
