Instructions
  1. Heat the pan.
  2. Add 2 tbl spoon of Extra Virgin Olive Oil.
  3. When Oil is heated, put in 1 tea spoon of garlic (should not over do it so garlic doesn’t overtake dish).
  4. In this dish, one of the most important ingredients is, as the name suggests it, blue cheese.
  5. There are few different verities well known throughout the World but we prefer to use Gorgonzola or Rockford for making our blue cheese sauce since it gives even more distinct flavor.
  6. Depending how strong is your Blue cheese sauce, add 3-4 tbl spoons (to your liking).
  7. Once all is combined and mixed well, add 1 ladle of cooking cream (about 5 ounces but it is directly related to how strong Blue cheese is as well as to the quantity used).
  8. Pinch of Salt & Pepper (to taste).
  9. Now bring in half cooked, handful of Broccoli florets (it will be fully cooked once dish is done and still have crunch).
  10. Last but not least, it is time to add pasta (it is very individual but average serving per person would be anywhere between 80-120gm as part of a full meal).
  11. Ideally to have authentic Italian pasta it should be Al Dente (fully cooked but still firm/with crunch when bitten into).
  12. Mix it well until pasta itself is fully covered in sauce but not to further cook.
  13. For garnish, add Grana or Parmesan (grated or shaved just before using for freshness/texture/flavor but be careful with quantity so it doesn’t change blue cheese base in flavor and texture since it would be overwhelming) as well as fresh parsley.
  14. Serve while hot in plate that will hold sauce.
