Enid Blyton Ginger Biscuits Recipe

To continue with our Enid Blyton inspired recipe series, today we’re sharing a recipe of ginger biscuits. All of Blyton’s adventurous character groups like The Famous Five and The Secret Seven enjoy snacking on ginger biscuits for tea. The Secret Seven always make sure to have some handy for their meetings:

“Janet went off not feeling at all pleased. She was quite afraid that Peter wouldn’t let her into the meeting! He was very strict about rules. She went into the kitchen but her mother wasn’t there. Some lamb chops lay on the table and Janet looked at them frowning. ‘Lamb! Oh dear – whatever ought you to remind me of? I simply can’t think! Oh – here’s Mummy. Mummy, may we have some of your ginger biscuits, please?”

Although those lamb chops also sound tempting, let’s focus on gingerbread biscuits for a minute.

Ginger Biscuits

Ginger biscuits are cookies or biscuits flavoured with ginger, and can be traced back to the 15th century. Gingerbiscuits are often shaped into human form to make gingerbread men.

However, we’re focusing on regular, round ginger cookies today. Have them with tea or as a snack!

Instructions
  1. Mix the flour and spices together.
  2. Combine the shortening, molasses, brown sugar, water, egg and vanilla.
  3. Add the flour and knead until you form a dough.
  4. Divide the dough into three and wrap in a plastic wrap.
  5. Refrigerate for three hours.
  6. Preheat an oven to 350 degrees F.
  7. Roll the dough into balls and roll out into 1/4 inch thickness.
  8. Cut into cookies with cookie cutters.
  9. Spread the cookies onto a lined baking tray.
  10. Bake the cookies for 10-12 minutes.
  11. Take out of the oven and cool.
  12. Store in an airtight container.
