Instructions
  1. Rinse the rice and soak for about a half an hour.
  2. Meanwhile you can blanch and slice the almonds.
  3. Once the rice has been soaked, begin making kheer by boiling milk in a deep vessel.
  4. As soon as the milk boils, reduce the heat and add the drained rice.
  5. Stir once and let the rice simmer in the hot milk.
  6. Keep cooking the rice on a low flame for about 40 minutes and stirring occasionally.
  7. Once the rice is cooked, add the sugar and keep stirring to avoid lumps.
  8. When the rice is almost cooked, add sliced almonds, cashews, cardamom powder and saffron.
  9. Once the kheer is ready and thick, turn off the heat and add the raisins.
  10. Serve hot or if you want to serve it cold, then let it come to a room temperature and then refrigerate.
