Dr Who Soufflé Recipe

Clara Oswald’s mother, Ellie Oswald had always mentioned that “a soufflé isn’t a soufflé; a soufflé is a recipe.” Following her footsteps, Clara too attempted to make soufflé plenty of times but didn’t quite succeed. Here’s a simple recipe for beginners and Clara too in the hope that she won’t stuff up this one!

Instructions
  1. Begin by preheating the oven at 375° F.
  2. Melt some butter in a pan.
  3. Add flour, salt and pepper.
  4. Stir continuously till it turns smooth.
  5. Mix in all the milk and keep stirring whilst bringing it to a boil and cook till the sauce thickens.
  6. Separate the egg whites from the yolks.
  7. Beat the yolks.
  8. Mix about 1/4 cup of the sauce with the yolks.
  9. Now blend this yolk mixture with the remaining sauce till it blends well.
  10. Let the sauce cool down.
  11. Meanwhile mix the tartar and the egg whites till you get a stiff mixture.
  12. Mix in the egg white mixture with the sauce in parts and mix till well combined.
  13. Pour the sauce into souffle moulds and bake in the preheated oven till it puffs up in about 20-25 minutes.
