When it comes to Gujarati cooking, there is absolutely no dearth of dairy, sugar, and jaggery. From dahi-infused snacks like the desi roll-up, a.k.a. khandvi to jaggery-spiked savory mains like the iconic Gujarati Kadhi, there is a little bit of sweet and dairy in a lot of dishes. One such dish that is rich in dairy and sweet is the delicious Gujarati dessert, doodh pak. The preparation is essentially rice kheer topped with chopped nuts including almonds, pistachios, and charoli, a.k.a. chironji. The dish is uber tasty and must be tried at least once. Here’s a recipe to leave you swooning!

Doodh Pak Recipe (Hindi)
Rich rice kheer topped with dry fruits.
Instructions
  1. घी को नौन-स्टिक पैन में गरम कर लें और उसमे चावल और घी को भुन लें।
  2. दूध को उबाल कर भुने हुए चावल और घी में मिलाकर २०-२५ मिनट के लिए उबाल पर पकाँए।
  3. हरी इलाईची पाउडर डाल कर अच्छी तरह मिलालें और चावल के पूरी तरह पकने तक पकाँए।
  4. चीनी और चिरौंजी १०-१२ मिनट के लिए पकाँए।
  5. बादाम और पिस्ता से सजाकर ठण्डा य फिर गरम परोसें।
