- 1 egg
- 2 tbsp Lemon juice
- 8 sprigs chopped mint
- 1/2 tsp coarse salt
- 1 tsp dijon mustard
- 1 cup vegetable oil
- Pepper as required

Instructions
- Put egg, mustard, lemon juice and salt in a blender.
- Turn on the blender and during blender pour in the oil slowly so as to mix it in properly.
- Once the oil in incorporated add the mint and blend till combined.
- Add in salt and pepper and serve.
