- 1 egg yolk
- 1/2 tsp dijon mustard
- 3/4 cup olive oil
- 1 tsp white wine vinegar
- 1 1/2 tsp Lemon juice
- 1/2 tsp salt and more for taste
- 1/4 tsp white pepper

Instructions
- Combine egg yolk, mustard and salt.
- Now add half the oil in small portions while constantly whisking.
- Once the oil is mixed in, begin whisking in lemon juice and vinegar.
- Now pour in the remaining oil and whisk till well combined.
- Once the mixture is smooth, add more salt and add pepper as well according to taste and mix.
