Creamy-licious Bitter Chocolate
A fudge-y creamy delight that is slightly bitter than cocoa but lactose-free and delicious.
unsweetened cocoa powder
can coconut milk
¼dark brown sugar
Pinch kosher salt
chopped about 1/4 cup
For The Meringue
large egg white
In a cup of 1/3rd boiling water, whisk cocoa
In a saucepan, add coconut milk, brown sugar and salt.
Stir and let it simmer until sugar is dissolved, about 2 minutes.
Add hot cocoa and chocolate and whisk until smooth.
Add vanilla and stir.
In a bowl beat egg white on medium speed until frothy, about 1 minute.
Add superfine sugar tablespoon by tablespoon as mixer is running.
Beat until egg white batter stiffens to soft peaks and is shiny, 5 minutes.
Dollop onto cups of hot chocolate.
