Creamy-licious Bitter Chocolate
A fudge-y creamy delight that is slightly bitter than cocoa but lactose-free and delicious.
For The Meringue
  1. In a cup of 1/3rd boiling water, whisk cocoa
  2. In a saucepan, add coconut milk, brown sugar and salt.
  3. Stir and let it simmer until sugar is dissolved, about 2 minutes.
  4. Add hot cocoa and chocolate and whisk until smooth.
  5. Add vanilla and stir.
  6. In a bowl beat egg white on medium speed until frothy, about 1 minute.
  7. Add superfine sugar tablespoon by tablespoon as mixer is running.
  8. Beat until egg white batter stiffens to soft peaks and is shiny, 5 minutes.
  9. Dollop onto cups of hot chocolate.
