Chinese Pepper Chicken Recipe

Chinese is a cuisine of many gravies and sauces. Be it with poultry, fish, shell fish, or even vegetables, the Chinese know how to sauce up their gravies just right, with each gravy better than the other. One such awesome preparation is the Chinese pepper chicken, which uses a stockpile of desi spices whipped up in an authentic Chinese fashion.

The dish can be made with out without gravy. The former version is great for having as snacks and appetizers, while the latter makes for an excellent main gravy dish to be had with steamed rice or noodles. Follow the recipe below to add a dash of Oriental to your dinner with a decadent pepper chicken.

Instructions
  1. Take all the ingredients given for frying the chicken - except oil - in a bowl. Mix well and let the chicken cubes marinate for 10 minutes.
  2. Now heat oil in a kadai.
  3. Add in the chicken and fry in the oil for 15 minutes till they are golden brown and cooked completely. Remove to a bowl.
  4. Now in the remaining oil add fennel and cinnamon stick and sauté for a minute.
  5. Add in ginger, garlic, curry leaves, onions, green chillies and fry for a minute.
  6. Now add in capsicum, salt, sugar, soy sauce, green chilli sauce, vinegar and mix well.
  7. Add in tomatoes and cook for a minute.
  8. Then add the water and bring to a boil.
  9. Now add in cooked chicken pieces, cornstarch slurry, pepper and toss well. Simmer for 5 minutes and increase the heat and let the gravy thicken.
  10. Garnish with spring onions and serve with rice.
