What’s better than a golden baked pie? A soft baked pie with some chicken, cheese, and egg! Otherwise known as quiche. Set in a delicious pastry crust, the dish packs a delicious punch with ingredients like veggies, cheese, mild seasoning, and meat. The French baked dish can either be made as mini bite-sized snacks or as one big pie that can be sliced up and served individually. Either way the dish can be tweaked in a number of ways to suit different palates or even different meals. For example, breakfast quiches that feature breakfast foods like eggs, ham, and the works.

The recipe we’re making today is that of a classic chicken quiche. Easy to make and absolutely scrumptious to gobble, the food makes for an excellent tea time snack. Follow the recipe below to make some quiche at home!

Instructions
  1. Preheat oven to 200C.
  2. Grease ten 1/3-cup capacity muffin pans with olive oil.
  3. Use a 9cm-diametre round pastry cutter to cut 10 discs from the pastry and use these cut out discs to line the greased pans.
  4. Line each pan with non-stick baking paper and fill with baking beans or rice.
  5. Bake for 8 minutes. Remove from the oven. Remove the baking paper and beans or rice.
  6. Reduce the oven to 180C.
  7. Whisk the eggs and milk together in a large jug. Divide the chicken, cheddar and broccoli among the pastry cases.
  8. Pour the egg mixture among the pans and bake for 12-15 minutes or just until the filling has set.
  9. Serve.
