Stir up some noodles
This easy noodle stir-fry recipe is perfect for a quick weekend dinner

  1. Add the noodles to a pot of boiling water with salt and oil
  2. Cook until al-dente and remove from heat
  3. Drizzle some oil on top of the noodles. Mix well and set aside.
  4. Toast the cashew nuts in a frying pan and set aside
  5. Add 1 tbsp of vegetable oil in a frying pan and heat it on medium
  6. Season the chicken with some pepper, and add it to the pan
  7. Stir-fry the chicken for 2-3 minutes or until golden in color
  8. Add the coriander stalks, garlic and ginger and cook for 1 more minute
  9. Add the spring onions, carrots and broccoli and stir-fry for 2 minutes
  10. Add the cooked noodles and stir-fry until the noodles becomes warm
  11. Stir in the soy sauce and fish sauce
  12. Remove from heat and garnish with nuts, sliced chilli and coriander leaves. Serve hot.
