Chicken Changezi Recipe (Hindi)

Words are just not enough to describe the richness of India’s chicken curry variants. From a zesty chicken Chettinad in the South to a creamy murgh makhani (a.k.a. butter chicken) in North, there is a mind-boggling variety to pick from. One such absolutely lip-smacking and finger-licking amazing chicken dish is Chicken Changezi, which is probably one of the richest chicken preparations out there. So if you have a palate for savoring mild spices blended with a velvety thick gravy, here’s a recipe just for you!

The chicken changezi finds its roots in Mughlai cuisine and resonates a similar style of slow cooking complete with rich ingredients like cream, cashew nuts, ghee, and the likes. So get your tandoori rotis ready, for there is some serious chicken binging to do!

Chicken Changezi Recipe (Hindi)
A mildly spiced rich chicken curry dish.
  1. चिकेन को भुन के रख लें।
  2. प्याज़ को तल कर रख लें।
  3. एक पतीले में घी, दूध, लेहसुन-अद्रक का पेस्ट, टमाटर का पेस्ट, धनिया पाउडर, लाल मिर्च पाउडर, व गरम मसाला पाउडर को १० मिनट के लिए पकाँए।
  4. तले हुये प्याज़ को काजू और पीनी के साथ पीसें। इस पेस्ट को चाट मसाले व नमक के साथ पतीले में ५-७ मिनट के लिए पकाँए।
  5. अब मलाई, कसूरी मेथी, हरी मिर्च, अद्रक, और नींबू के रस को पतीले में डाल कर ५-७ मिनट और पकाँए।
  6. आखिर में भुने हुए चिकन को इस ग्रेवी में मिलाँए और धीमी आँच पर ५-७ मिनट के लिए पकाँए।
  7. हरी मिर्च, अद्रक व उबले अन्डे से सजाकर रोटि या चावल के साथ परोसें।
