Blend together the almond milk, cherries, cardamom powder, sugar and vanilla extract in a blender until smooth. Pour this mixture over the Chia seeds, and stir. Let it set for a few hours.
Move on to making the cherry topping. Make a paste of the cherries in a blender or food processor. Then drain the cashews, and add them into the blender as well, with the cold water, vanilla extract and sugar.
Once your Chia Seed Pudding is set, you can top it off with the cherry cream and enjoy it served cold.
