So Cheesy it might just be Illegal
Nothing like making Cheese Straws from scratch. None of that puff pastry hassle- just the raw cheesiness.
grated extra-sharp cheddar cheese
2 packed cups
all purpose flour
Scantcrushed red pepper flakes
roughly chopped fresh herbs
stick cold unsalted butter
Preheat the oven to 400°F. Line two baking sheets with butter or parchment.
In the bowl of a food processor, combine the cheese, herbs,flour, salt, flour and red pepper flakes. Mix until the mixture looks like coarse crumbs.
Cut the butter into 6 cm chunks into the mixture. Mix until mixture looks like bread crumbs with a few pea-sized butter crumbs. Add Heavy cream and pulse again.
Dump the dough on a floured surface.
Use your hands and flour as needed to bring the dough to form a 1/2 inch thick rectangle. Slice in half.
Roll each block of dough into a 8 x 10-inch rectangle about 1/8-inch thick.
Cut the dough into thin strips.
Transfer to the baking sheet with sufficient spacing between the strips.
Bake for 10-12 minutes.
Set on a wire-rack to cool and serve with your favourite dipping sauce.
