Carrot Kheer Recipe

The carrot kheer is one such delicious member of the kheer family that blends the yummy taste of gajar ka halwa and the creamy texture of kheer into one palatable dish. Follow this recipe to make some yummy carrot kheer at home!

Instructions
  1. Heat the ghee in a non-stick pan. Add the cashews and sauté till lightly browned. Drain and set aside.
  2. Add the grated carrots in the same pan and sauté for 2-3 minutes and set aside.
  3. Bring the milk to a boil in a deep non-stick pan and simmer till it is reduced to 3/4th its original quantity.
  4. Add the sautéed carrots and mix well.
  5. Now, add the sugar, mix well and cook till the sugar dissolves and the mixture thickens slightly.
  6. Finally, add the cardamom powder and kewra jal. Mix well.
  7. Pour the kheer into four individual serving bowls, garnish with the browned cashews.
  8. Serve.
