Instructions
  1. Pound the chicken using a meat tenderizer until ½ inch thick. Pre-heat the oven to 400 degrees.
  2. In a large skillet, heat olive oil on medium heat. Saute the vegetables for 5 minutes or until half cooked.
  3. Place some chicken at the centre of each breast and spoon a large portion of the sautéed vegetables on top. Top it with more cheese.
  4. Roll the chicken tightly nd secure with toothpicks. Season generously with Cajun seasoning and add a knob of butter on each breast.
  5. Bake in the oven until the chicken is completely cooked through. Slice the chicken in half and serve hot.
