Thick and creamy, basundi is a popular Indian sweet treat.

  1. Boil milk in a deep saucepan.
  2. Once the milk begins to boil add sugar.
  3. Stir milk and sugar for two minutes.
  4. Reduce the heat to low, and add milk powder to the mixture. Stir.
  5. Allow the mixture to simmer until it thickens, stirring occasionally.
  6. When the milk has reduced to half of its original quantity add cardamon, saffron, pistachios and almonds.
  7. Add sugar and cook on low heat for two more minutes.
  8. Remove the pan from the heat and pour the mixture into a serving bowl.
  9. Garnish with nuts and saffron strands.
  10. Serve!

Basundi can be served hot, with puris or chilled, as a dessert.
