A Banana Roast recipe that will light up your world

Pedas, barfis, rasagullas, gulab jamuns, – you can see Diwali is really close to the heart, read, stomach. So since Diwali is round the corner, we thought we’d throw in this Banana Roast recipe that sounded interesting- to add to the festivities. Not that there weren’t enough sweet things- but this recipe is a sort of ‘backup’. Too many guests rushing in unannounced? Get the Banana roasting. Happy Diwali folks!

Instructions
  1. Cut the bananas in small cubes.
  2. In a pan, add ghee, cashews and raisins. Stir fry in the ghee for a minute.
  3. Add 4 tbsp of grated coconut and when it turns golden, add the banana.
  4. When the banana is partially cooked, add sugar and cardamom powder.
  5. Cook until it is completely roasted and the aroma from the banana mixed with spices gets to you.
  6. Garnish with grated coconut and nuts.
