Badam Pakoda literally translates to almond fritters. But in actuality, ‘badam pakoda’ refers to peanut fritters. The batter fried nuts are a mind-blowing munchy and can take you through the day without adding too many calories as you snack.

Instructions
  1. Dry roast the peanuts for 3 minutes in a pan. Remove from pan and allow to cool down.
  2. Take the corn flour, gram flour, 1/2 teaspoon red chili powder, asafetida and salt in a mixing bowl. Add the peanuts and mix well.
  3. Add 1 teaspoon of hot oil and sprinkle a little water to form a loose dough enough to coat the peanuts.
  4. Heat oil for frying in a wok.
  5. Add the peanuts in small batches, while separating the peanuts with your fingers before adding to the oil.
  6. Fry on low to medium flame till the sizzling decreases, about 3-4 minutes.
  7. Remove from wok and keep on tissue paper to absorb excess oil. Repeat for remaining peanut dough.
  8. Add the remaining chili powder, jeera powder, amchur powder and pinch of salt to the roasted peanuts. Shake well to coat the peanuts.
  9. Allow to cool down for becoming crunchy. Store in an airtight container.
