Poha Upma Recipe
Aval Upma is a quick fix breakfast recipe which you can prepare in a jiffy with minimum and easily available ingredients. I find many mothers resorting to 2 minutes instant food for breakfast due to lack of time. This aval recipe can also be prepared in just a few minutes time and is very healthy, delicious and filling.

  1. Wash poha 2 times and drain it in a colander. Let it sit for 10 minutes.
  2. Dry roast peanuts and keep it aside. Skip this step if you are using roasted peanuts.
  3. Heat a tbsp of oil, add mustard seeds, when it splutters, add cumin seeds, hing, red chilli and curry leaves.
  4. Then add finely chopped onions, ginger, green chillies, turmeric powder and salt. (you can add salt required for the aval also now)
  5. Saute until onions turn pink.
  6. Then add poha/aval, roasted peanuts and mix well. Cook for 2-3 seconds and remove from flame.
  7. Squeeze a few drops of lemon juice and mix well.
  8. Garnish with coriander leaves and grated coconut.
Note
  1. If you are using thick red aval, rinse the aval 2-3 times, drain the water completely and then sprinkle little water. Let it sit for 15-20 minutes, so that it will become soft. You can use any kind of aval but make sure it is soft before adding to the upma.
