Treat yourself to a Mexican brunch with these tasty, cheesy enchiladas!
Instructions
  1. Preheat your oven to 350 degrees F.
  2. Boil the tomatilllos, Serrano and yellow chile in the water over medium heat.
  3. Boil for ten minutes.
  4. Then, put the mixture in a blender, add the garlic and cilantro and blend until smooth.
  5. Add salt and pepper as per taste.
  6. In a small skillet, fry the tortillas until golden (ten seconds on each side).
  7. Divide the shredded chicken into six equal portions and fill each tortilla with it. Roll the tortillas into cylinders.
  8. In a baking dish, spread 1/3 cup of the sauce over the bottom.
  9. Place the filled tortillas over the sauce.
  10. Pour the rest of the sauce over the tortillas.
  11. Then pour over the sour cream and cheese and bake for thirty minutes.
  12. Serve immediately.
