Recipe Notes

Chinese or hakka noodles are available in provision stores in their dried form in packets.
They have to be cooked in salted boiling water and used.
To make fried noodles, the same noodles are half-cooked in the water and then the water is drained out.
The cooked noodles are patted dry with a cloth and deep-fried in hot oil till crisp.
Remember to choose the vegetarian version of hakka noodles.
