Of the many things that are vital to Indian households, potato dishes and chai­-time snacks are two that are probably the most indispensable. The former finds its way into pretty much every dish, cuisine, and region, while there is no evening possible without a bowlful of the latter. And what is better than a snack made of potatoes, a.k.a. aloo bhaja.

Aloo Bhaja is essentially deep-fried potato shreds seasoned with salt and some turmeric to give it the signature aloo bhujiya yellow. And while there are a number of marketplaces that sell packaged aloo bhaja, there is nothing like a batch of homemade ones. Follow this recipe to make some at home! You can even switch it up by adding a teaspoon of red chili powder while seasoning the potatoes with turmeric.

Instructions
  1. Cut potatoes into thin strips and soak them in water. Remove potatoes from water and lightly squeeze the extra water and put them in a bowl.
  2. Add salt and turmeric powder and mix.
  3. Heat oil in a non-stick pan. Add the potatoes to the pan and shallow-fry, stirring to ensure even cooking, till crisp and lightly browned.
  4. Drain and place on absorbent paper.
  5. Serve.
