Jam of your choice
Preheat an oven to 190degrees Celsius.
Sift the flour and knead the butter and lard into it.
Stir in the sweetener and egg yolk.
Sprinkle in a few drops of cold water until the dough becomes smooth.
Roll out the pastry to 5mm thickness and cut into round circles.
Hollow out each tart and bake for 20 minutes until crisp.
Spoon in about two tablespoons of each jam into the tarts while still warm and serve.
