Instructions
  1. Soak the rice in warm water for two hours.
  2. Drain and spread it across a white cotton cloth for half an hour.
  3. Grind the rice to a rough flour.
  4. Sieve the rice flour.
  5. Grind the jaggery into a powder and put the powder into warm water.
  6. Stir until the jaggery dissolves and then filter the syrup.
  7. Heat the syrup over a medium flame, stirring occasionally.
  8. Add water to the boiling syrup, a little at a time.
  9. Once the water stops dissolving and the syrup begins to thicken, take it off the heat.
  10. Stir in small amounts of this syrup into the rice flour until the dough becomes gooey.
  11. Add the sesame seeds, ginger and elachi powder and stir well.
  12. Place the dough in an airtight container and allow it to sit overnight.
  13. Shape the dough into lemon sized balls.
  14. Grease a zip lock bag with a dollop of ghee, place the ball inside it and flatten the dough into a disc.
  15. Then, drop the discs into hot oil.
  16. As the dough rises, flip it over and allow it to fry until it turns golden.
  17. Using a slotted spoon, remove the athirasam from the oil and drain on a paper towel. Serve while warm.
