My mom once said," I can eat Aapam for all three meals of a day". It's quite true in Kerala. This fluffy rice pancake has a soft centre and crisp edges and is eaten with sweet coconut milk.

Instructions
  1. Soak rice (boiled and raw) together in enough water to cover it, for 2-3 hrs.
  2. Grind the rice in a grinder after adding to it the coconut water and cooked rice.
  3. Add salt to this blend.
  4. Add the grated coconut.
  5. Add water slowly. You need a batter that is not too watery. So be stingy with the water.
  6. Transfer to a bowl with a lid. Allow it to ferment overnight in the kitchen on the counter.
  7. When ready to cook, add baking soda, sugar and 1/4 tsp salt (you may need more salt if you're used to more).
  8. Mix well and keep aside for 10 mins.
  9. Heat the aapam skillet, grease it and pour a ladle full of batter in the centre.
  10. Swirl the aapam skillet in a circular motion, gently but swiftly so that the sides are thin and center thick.
  11. Cover with a lid and cook in medium flame for 2 minutes.
  12. When the sides start to brown, remove carefully and serve.
  13. Repeat with the remaining batter.
