No matter your age or the time of day or year, cookies are always a winner. Whether it’s loaded with chocolate or got oatmeal and raisins, everyone likes cookies. There are even healthy cookie options out there now. Sure, the cookie market is exploding with Oreo introducing new flavours and trying other ones constantly, but what makes cookies so good all the time is that they’re perfect as a snack, they can be eaten while you’re drinking your coffee or tea and they aren’t always sweet. There are cookies that have just enough sugar for it to classify as a cookie, but for the most part, it’s just a good bite between sips of your drink.

You can make all kinds of cookies at home and to get you started for Christmas (which is ONLY two months away!) we thought it’d be a good time to give you some practice. So here we go, whip out the baking tray and turn your oven on, because we’re going to make cookies this month!

Peanut Butter Cookies

Mix the sugar, peanut butter, butter, egg, shortening in a bowl and then when nicely mixed, add in the flour, butter, baking soda and baking powder and stir it all together. Cover and stick it in the fridge for a few hours. Turn your oven to 375ºF and then shape the dough into small balls and place it on your tray, make sure to leave enough space between each of them. Then using a fork, press it down and bake!

Snickerdoodles

Put the butter, shortening, sugar, eggs and vanilla in a bowl and mix together, then add in the flour, baking soda and salt. Make the dough into little balls and then dip it into a sugar-cinnamon mixture before you put it on a baking tray. Turn your oven to 400ºF and bake!

Chocolate Chip Cookies

This is the classic cookie that everyone knows, so it’s really easy to get this one done. Mix the sugar, butter, vanilla and egg into a bowl, then add in the flour, baking soda and salt. Once the mixture is nicely blended, add in the chocolate chips (and nuts, if you like it) and scoop up little balls and set it on the tray. Stick it in the oven and let your house fill up with the scent of delicious cookies.

Oatmeal Raisin Cookies

Make sure you soak your raisins for a bit, so that they don’t get burned during the baking process. Mix your ingredients together in a bowl, including some cinnamon. Then once the flour and baking soda are added and mixed together, add in the raisins. Make balls or just scoop up bits and drop it on the baking tray and voila, ready to bake.

Glazed Lemon Cookies

Whisk together flour, baking soda, salt and lemon zest. In another bowl, beat the butter and granulated sugar till fluffy. Add egg, vanilla and lemon juice and beat till all combined. And then finally add in the flour. Heaped tablespoons of the dough to be put onto the baking tray and once done, spread lemon glaze over it and let it set.

Gingerbread Cookies

Yes, we know two months away. But that doesn’t mean you can’t make gingerbread cookies in advance! Mix the shortening, molasses, brown sugar, water, egg and vanilla till smooth, then add in the flour, baking powder, nutmeg and cinnamon till it’s all completely absorbed. Then you can spread it out and make the shapes you want, or use heaped tablespoons on your tray and bake it accordingly.

This is an interesting one, for sure! First, melt the butter and chocolate chips together and stir till smooth. Then mix the eggs, cocoa powder and sugar, then add in the melted chocolate and mix well! Vanilla, salt, baking powder comes next and mix before you add in the flour and repeat. If you want, you can fold in nuts or white chocolate chips before you spoon heaps onto the tray. Then bake and voila, brownie cookies!

Red Velvet Cheesecake Cookies

This is a little more complicated, but so totally worth it. First make the cookie dough and add in a Red Velvet Cake Mix (it’s so much easier!), then wrap it up and put it in the fridge. In the meantime, make the cheesecake filling using cream sugar, powdered sugar and vanilla. Mix till smooth, then make tiny little balls and stick them in the freezer to set. Now take your red velvet cookie dough and flatten it in your hands, then place a cheesecake ball in the centre and wrap the dough around it and set it on a tray. Repeat till all are done, stick it in the oven and voila.

Shortbread

If you’ve never had shortbread, you are definitely missing out. So here’s a way you can make it and enjoy it too! Beat the butter, then add the sugar and the vanilla extra and finally stir in the flour. Flatten the dough and chill for an hour or two. Then spread the dough on a flat surface and using your cookie cutter, make whatever shapes you’d like, put it on the tray and bake till lightly browned. And they’re ready. See, simple!

Almond Biscotti

This is a little different from the traditional cookie, so be careful with the process. Mix the flour, sugar, baking powder and salt, then the eggs and vanilla till it’s all mixed together. Then toss in the almonds and divide the dough in half and form logs with each half. Bake till the dough is firm, but gives slightly when pressed. Once baked and cooled, cut the logs into slices and then bake again till the pieces are crisp and golden.
