7 Quick Lunches To Get You Through The Week

With a hectic day ahead, and late evenings, having a home cooked meal for lunch seems like a difficult prospect. And more often than not, we end up eating out. If eating out everyday isn’t your cup of tea, try your hand at these dishes which can be made in under 30 minutes. 

Waffled Chorizo-Cheese Quesadilla

For a quick, delicious lunch, combine lime juice, onions and salt in a bowl. Cook a chorizo in a skillet. On a tortilla, scatter cheese and the pickeled onions. Throw this on a waffle iron, or a toaster, and cook until golden brown. Cut the quesadillas into wedges and top with the chorizo. Voila, take no time to make and can be enjoyed with salsa, sour cream and avocado. 

Thai Peanut Noodles With Confetti

This delicious dish takes only 5 minutes to make. All you’ve got to do is cook some noodles with edameme and bell peppers. Combine the noodles with peanut sauce, water, soy sauce, hot pepper flakes, and lime juice. Top with corriander leaves and sesame seeds. 

Bulgur Salad With Spring Onion Vinaigrette

This is the perfect lunch recipe for those counting calories and health conscious. It’s easy to make and tasty. To put together the salad, squeeze out as much water as possible from cooked bulgur, and mix in onion, tomato, parsley, mint, and sliced spring onions. Drizzle it with vinaigrette made by blending lime juice, honey, serrano, and spring onions until smooth. 

Black Bean And Corn Salad

For this salad, you can either use left over cooked corn, or boil fresh corn, and add it to a pan with olive oil. To that add onion, red pepper, vinegar, and black beans. Stir in garlic and the mangetout and season with salt and pepper! Tasty and healthy! 

Herbed Egg White Omelette With Tomatoes

Toss tomatoes with the vinegar, and 1 teaspoon of the olive oil, season with salt and pepper, and set aside. Whisk egg whites until foamy and doubled in volume, and season with salt, pepper, and parsley. Cook, without stirring, until the whites are almost set and light brown on the bottom, about 3 minutes. Transfer the pan under a heated grill and cook until the omelette sets and begins to brown. Spoon half of the tomato salad onto half of the omelette and fold the omelette over the filling. 

Classic American Grilled Cheese Sandwich

To make this classic american favourite, add a slice of white cheese on 4 pieces of bread and 1 slice of yellow cheese on another 4 slices of bread. Close the sandwiches and butter both sides. Place on a griddle, cover with a metal bowl and let the sandwiches get a nice golden brown. Flip the sandwiches, cover again with the metal bowl and cook until the cheese is melted and the sandwiches are golden brown. 

Fresh Corn And Tomato Salad

Whisk vinegar, salt, and pepper in a small bowl. Gradually whisk in oil, starting with a few drops and then add the rest in a steady stream. Shear off the corn kernels with a sharp knife over a bowl. Toss in the tomatoes, spring onions, and mozzarella. Pour the vinaigrette over the salad and toss to coat. Before serving, tear some basil over the salad and toss.
