The Princess And The Frog Tiana’s Beignets Recipe

Even today, one of my favorite ways to spend an evening is curled up on a couch watching a Disney movie. The classics like Sleeping Beauty and The Lion King remain firm favorites, but I’ve also enjoyed Disney’s more recent released like The Princess and the Frog.

Indeed, food lovers find it easy to identify with Tiana, the main character in the movie, whose chief dream is to save enough money to open up her own restaurant.

Tiana’s Beignets

To earn money to buy a sugar mill she can convert into the restaurant, Tiana agrees to make beignets for a ball. There’s a lot that happens after that (it involves voodoo witch doctors and trumpet playing alligators – another reason to watch the movie), but let’s take a moment to focus on those delicious looking beignets:

Beignets are the French name for deep fried choux pastries made using sugar, bread flour and evaporated milk.

They’re popular in New Orleans (where the movie is set) and served for breakfast or as  hors d’oeuvres with sugar on top. Whip up some beignets as a snack or serve them as an appetizer to lunch or dinner.

Instructions
  1. Mix the yeast into the warm water.
  2. Stir in the sugar, salt, eggs and evaporated milk and blend.
  3. Add four cups of flour and blend until smooth.
  4. Fold in the shortening and add the remaining flour.
  5. Cover it and chill for 24 hour.
  6. Roll the dough out into a 1.8 inch thick disc.
  7. Cut into 2 1/2 inch squares.
  8. Heat oil to 360 degrees and deep fry the beignets.
  9. Remove from the oil once they turn golden brown and drain on paper towels.
  10. Sprinkle the sugar over the beignets.
  11. Liberally spoon honey over the beignets and serve warm.
