Princess Diaries Mint Sorbet Recipe

One of our favourite ‘chick flicks’ remains The Princess Diaries – a movie that chronicles the transformation of Mia Thermopolis to Princess Amelia Mignonette Thermopolis Grimaldi, the Princess of Genovia. The movie has some hilarious moments as Brooklyn born and bred Mia struggles to acclimatise herself with fancy dinners and royal etiquette. One scene that had us cracking up was when Mia, the Prime Minister of Genovia and his wife all took large spoonfuls of mint sorbet, bemusing the whole dinner table as they coped with the cold:

Despite their discomfort, a look at that bowl of green sorbet has use craving some as well, don’t you agree? Before we get into a recipe for mint sorbet, here’s what you need to know about the frozen dessert.

Sorbet Sojourns

Sorbet is a frozen dessert, made with sweetened water and fruit juice, fruit puree or wine flavouring. It is served as a low fat alternative to ice cream and has a crunchy texture. As the Prime Minister said, it is often used as a palate cleanser between meals as well as for dessert.

Enjoy some sorbet after lunch or dinner; it’s especially refreshing in the summer!

Instructions
  1. Mix the sugar, mint and lemon zest together.
  2. Stir the boiling water into this mixture until the sugar completely dissolves.
  3. Allow the mixture to sit for 20 minutes and then strain.
  4. Stir in the lemon juice and chill the mixture until cold.
  5. Pour this mixture into a metal cake pan and freeze until solid.
  6. Once solid, break into chunks and process in a food processor until smooth.
  7. Serve.
