Here’s a step by step process to cut and peel the butternut squash!
Step 1. Use a sharp knife and cut off about 1/4 inch from the bottom and the top of the squash.
Step 2. Use a vegetable peeler and peel the outer layer of the squash, either holding it in your hand or stand it upright on your chopping board.
Step 3. Once peeled, using your knife, make one long cut down the middle from top to bottom. It might be a little hard, but if your knife is sharp enough, it shouldn’t be a problem.
Step 4. With a metal spoon, scrape out the seeds and the pulp from the center. It’s up to you whether you want to keep the seeds or throw them away.
Step 5. Turn the squash halves flat side down on the cutting board and work section by section to cut the squash into slices lengthwise and then chop them into smaller bits if you need it.
