When we were kids, it was always a struggle to get our veggies down. Let’s be honest, we always wished that our vegetables would taste like ice cream, and were always bitterly disappointed when that never quite happened. However, thanks to cutting-edge technology and such, we’ve now been blessed with Peekaboo ice cream, that’s made with cauliflower and spinach!
Jessica Levison posed this question to herself: “Wouldn’t it be rad if veggies tasted like ice cream?”. After a couple months of tinkering with the recipe, Peekaboo ice cream was born, a line of 5 classic (vegetable) ice cream flavors that has a healthy amount of veggies in every serving.
Jessica chose to specifically use vegetables that didn’t have such a strong flavor (hence the cauliflower) as she claims that you can’t taste the veggie part of the ice cream at all and instead are fully taken in by the cold, creamy ice cream!
The chocolate flavor is made with cauliflower, the cotton candy pint is made with beets, the mint chip ice cream is made with spinach, the strawberry one has carrots in it, and the vanilla flavor has hidden zucchini.
