Key lime is more commonly known as ‘nimbu’, ‘limbu’, ‘nimmakaya’, ‘yelemchangai’, etc in India. This tiny little citrus bordering on acidic fruit is the source of everyone’s favourite cooler during summer. A little limeade juice will cool you down with its refreshing zing! But that’s not all it can be used for! Limes or as the westerners call it ‘Key Lime’ are pretty amazing in a dessert. And with St. Patty’s Day around the corner, what better way to beat the heat than with a ‘No Bake Key Lime Pie’. One little tip, add a little green food colouring to make it a St. Patrick’s Day Dessert. I’d suggest using a food colour paste than liquid though, somehow you always get a richer colour.
