Mildred Pierce Lemon Meringue Pie Recipe

Mildred Pierce, which is based on a novel by James McCain and is about a divorced mother trying to open a restaurant during the Great Depression, is at present on air. Staring Kate Winslet, it follows her journey from a scorned housewife to a successful restaurateur.

The first time Mildred (who Winslet plays) gets an inkling that her future success may lie in cooking is when she offers to bake pies for the restaurant she’s working at. Ida, her co-worker advises her to make a lemon pie, which is extremely well received at the restaurant.

Here’s a recipe for the lemon meringue pie which we think tastes just as good as Mildred’s would have.

Lemon Meringue Pie Recipe

Ingredients: 

1 cup white sugar
2 tbsp all purpose flour
3 tbsp corn-starch
1/4 tsp salt
1 1/2 cups water
2 lemons, juiced and zested
2 tbsp butter
4 egg yolks, beaten
1 9 inch pie crust, baked
4 egg whites
6 tbsp white sugar

Recipe:

Preheat an oven to 350 degrees F.
Whisk together one cup of white sugar with the flour, corn-starch and salt.
Add the water and lemon juice to this mixture.
Place over medium heat and stir in the lemon zest.
Cook until the mixture comes to a boil and then stir in the butter.
Whisk in the egg yolks and then bring to a boil.
Stir until thick and then remove from the heat.
Pour into the pie shell.
Whip the egg whites and add the 6 tbsp of white sugar gradually.
Continue whipping until peaks form.
Spread over the pie and then bake for ten minutes.
Serve and enjoy.
