Instructions
  1. Cut the chicken pieces into 2½”strips.
  2. Soak the strips in buttermilk for 20 minutes.
  3. Drain the buttermilk and mix the chicken strips with ginger-garlic paste, turmeric, corn flour, and red chili powder. Set aside for 10 minutes.
  4. Deep fry on medium heat till the chicken turns light golden on all sides. Remove onto a kitchen towel to drain off excess oil.
  5. In the same oil sauté the garlic, curry leave, and green chili.
  6. When the curry leaves turn crisp, add the red chili powder, mint leaves, and garam masala powder.
  7. Sauté for a minute and then add the curd. Stir and cook till the mix becomes thick and all the moisture has evaporated.
  8. Add the soy sauce and mix well.
  9. Now add the fried chicken to this mix and coat the strips evenly. Turn the stove off.
  10. Serve.
Recipe Notes

If you want to bake the chicken strips instead of deep-frying, then leave the strips for marination in the buttermilk for at least 2-3 hours.
