Idli Fry Recipe

Resorting to leftovers for a meal – unless it’s something super fancy like a nice curry or some pizza – is as depressing as it bland. Especially when it comes to simple things like rice, idli, et al.

How about cranking up the taste ante of the leftover idli? All you need is some veggies from your fridge, few fresh leaves, a handful of spices and a pan. Sautéed idli or fried idli is an excellent way of whipping up a quick and delicious snack without rooting around for much. Made in very little oil, it is also a healthy and gets high points in the taste department as well. Here’s a recipe to fancy up your idlis a little.

Instructions
  1. Heat oil in a pan and shallow fry idli pieces with chili powder salt to taste. Keep aside.
  2. Now heat the remaining oil and add mustard seeds, curry leaves and sauté.
  3. Then add chopped onion, capsicum, coriander leaves, whole red chilies, garam masala, salt, ginger-garlic paste and grated coconut one by one and sauté well.
  4. Then add the fried idli pieces and mix well.
  5. Serve hot.
