Yummy-licious pizza with a crisp and light crust. If you're tired of pizza but not really tired of pizza (if you know what I mean) then go ahead and make this one.

Instructions
  1. Preheat oven to 375 degrees F.
  2. Grease a pizza pan with non stick spray.
  3. Whisk all dry crust ingredients together in a bowl.
  4. Add egg and enough water and mix until it sticks together.
  5. Roll out to a size that fits the pan keeping it about a ½ inch thick. Alternatively, if it's too sticky, spread with your fingers directly on the pan.
  6. Spray the top of the crust with non stick spray.
  7. Bake for 15 minutes.
  8. While pizza is cooking, toss chicken in enchilada sauce to coat.
  9. Remove pizza.
  10. Use a spatula to make sure the pizza crust is not stuck to the pan.
  11. Place the pizza toppings on the pizza (in order listed above).
  12. Bake for another 5 minutes.
  13. Remove from oven and let cool for about 5 minutes.
  14. Garnish with pico de gallo and fresh cilantro.
  15. Serve hot.
