Harry Potter Knickerbocker Glory Recipe

Before there were chocolate frogs and every flavour beans in the world of Harry Potter, there was the Knickerbocker Glory.

In ‘Harry Potter and the Philosopher’s Stone’, on the fateful visit to the zoo on Dudley’s birthday, Harry gets to eat Dudley’s Knickerbocker remains; perhaps foreshadowing that things are going to get better for him.

Ingredients

• 4 scoops vanilla ice-cream
• 4 scoops strawberry ice cream
• 100 grams strawberries washed and sliced
• 50 grams cashew dry roasted
• 50 grams flaked almonds dry roasted200 ml fresh cream, whipped

To make the strawberry compote

• 250 grams fresh strawberries
• 50 grams sugar
• 1/2 tsp Lemon juice
• 2 tbsp Water

Instructions

To make the compote

1. slice the strawberries and combine them with the sugar, lemon juice and water and place them in a pan.
2. Set the pan over low heat and cook for twenty minutes, stirring occasionally.
3. After 20 minutes, take the compote off the stove and allow it to cool.

To make the sundae

1. Lay the base of the glass with the strawberries.
2. Add two scoops of the ice cream and vanilla ice cream over the strawberries.
3. Pour the strawberry compote over the ice cream and stir in the chopped nuts.
4. Top with the whipped cream and a few slices.
