To answer your second question, too much gluten and not being careful about your gluten intake can definitely lead to Celiac Disease. Which is why everybody is very gluten conscious and always ask for food that is “gluten-free”.
There are some foods that are naturally gluten-free and obviously to prevent Celiac Disease, or to fight against it, eating these foods is good for you.
Fruits, vegetables, meat and poultry, fish and seafood, dairy, beans, legumes, and nuts are all naturally gluten-free.
