Growing up, I always knew it as “Bombay Toast”, and I still don’t know why it was called that, when the world knows it as French Toast. But what I do know is that it’s one of my favourite things to make. It’s simple and uncomplicated and it takes very little time and I could probably do it in my sleep. As someone who doesn’t cook very often and sometimes (read: more often than not) burns her food when it’s on the fire, I could go so totally wrong while I’m making my French Toast. Yet, I don’t. It’s not always going to be perfect, but it does the trick.
Whatever you’re eating it with, that doesn’t really matter. Your focus needs to be on the bread and the way you make it. As a kid, my mother never added vanilla essence or cinnamon. It was just eggs beaten up and mixed with milk before the bread was dunked in and then toasted. But vanilla and cinnamon gives it the sweetness that you wouldn’t get otherwise. There’s no sugar added during the process, but when you sit down to eat, sprinkle some over the toast or just douse it in French Toast.
So for all those who have never made Bombay or French Toast or who are lazy enough to not want to make extravagant breakfasts, this one is for you.
4 slices of bread
1 Teaspoon of Ground Cinnamon
1/2 Teaspoon Vanilla Essence/Extract
1 Cup Milk
2 Tablespoons Butter
Break the egg, add the cinnamon and vanilla essence, then mix
Add the milk and mix properly
Dip the bread in the mixture and coat thoroughly
Add a piece of butter to the pan and then set the bread in the pan
Toast till brown, and repeat
Sprinkle some cinnamon powder, sugar and chocolate chips or serve with maple syrup
