Downton Abbey Kidney Soufflé Recipe

It’s been almost a year since period drama, Downtown Abbey, aired its final episode, but we came across some re-runs on television the other day and proceeded to indulge in some nostalgia.

Downtown Abbey focuses on the two aspects a grand household during the Edwardian Period; the noble men and women who lived in it and their servants. Being a period drama, there’s a lot to love in the language used, the costumes and – of course – the meal scenes.

Food was a big part of life during the Edwardian period – the noble class threw lavish parties with lavish food and used meal times as an opportunity to display their social status, bond with the family and strike business deals.
Since food is always being prepared, there’s no shortage of accompanying food disasters like the time the kidney soufflé got burnt and then ended up on the floor. We’ve decided to share a recipe for a kidney soufflé that we hope will end up in your stomach; serve it as a main course with potatoes for lunch or dinner.

Instructions
  1. Preheat an oven to 350F.
  2. Butter a soufflé dish.
  3. Melt two tablespoons of butter and sauté the shallot for four minutes.
  4. Stir in the pork and kidney and cook for five minutes.
  5. Reserve to a bowl.
  6. Add the rest of the butter and add the flour and toss until the flour begins to turn golden brown.
  7. Add the stock and marmite.
  8. Cook for five minutes, stirring occasionally.
  9. Take off the stove and stir into the meat mixture.
  10. Allow to cool and then add the egg yolks.
  11. Whisk the egg whites until stiff peaks form and fold into the meat mixture, a little at a time.
  12. Place into the soufflé dish and bake for about 30 minutes until the soufflé begins to rise and brown.
  13. Take out of the oven and serve immediately.
