Cooking With Milk: Dishes You Can Make With Milk

A common household dilemma is how milk one should buy. When you think there will be too much milk, you buy a litre less, and more often than not, those says you end up needing more milk! Well, don’t fret. Start buying a little extra anyway, and never have to worry about it getting spoilt, or having to throw it away. Check out the many ways you can incorporate milk into daily cooking, be it a casserole, hot chocolate, or a delicious dessert

Classic Creme Caramel

The addition of eggs and a generous dose of vanilla transforms even lowfat milk into a silken dessert. All you’ve got to do is make caramel, pour it into custard cups coated with cooking spray. In the meanwhile, Beat eggs and egg white, stir in milk, vanilla, sugar, and salt. Pour this mixture into the prepared custard cups. Place cups in baking pan, and add hot water. Then throw it into an oven, until a knife inserted in center comes out clean. Cover and chill at least 4 hours. Voilà, your creamy caramel cups are ready to be devoured! 

Creamy Cauliflower With Herbed Crumb Topping

Finely crumb bread slices. Cook, and drain cauliflower. Melt butter and add leek, and garlic cloves to it. Combine flour and milk in a pan. Cook this mixture until it’s thick. Remember to keep stirring! Stir in salt, cheese, and pepper. Remove from heat and stir in cauliflower. Spoon this mixture into a baking dish coated with cooking spray. Melt remaining butter in a small skillet. Add garlic cloves and cook until lightly browned. Remove from heat and combine breadcrumbs, salt, parsley, and thyme. Drizzle with garlic-butter mixture and toss to combine. Sprinkle breadcrumb mixture evenly over cauliflower mixture, and bake until golden. Who knew cauliflower could sound so delicious? 

Barcelona Hot Chocolate

The Ferrari of hot chocolates, this sophisticated European version includes bittersweet chocolate, espresso, and a strip of orange rind, making a perfect after-dinner drink. Be sure to remove from heat when a string of tiny bubbles forms around the edge of the pan, because boiling might cause the milk to curdle. 

Braised Pork With Lemon and Sage

This dish features an Italian technique of slowly cooking a whole pork roast in milk. In a small bowl, mix flour, salt, and pepper and sprinkle the mixture over pork. In a pan, brown the pork well on all sides, and transfer to a slow-cooker (add all the pork juice too!) In a pan, add garlic and sage and stir. Add this to the slow-cooker, along with milk and lemon peel. Cover and cook this until the pork is tender, and the sauce is golden brown and has reduced by about half. Serve meat with sauce on the side.

Golden Macaroni and Cheese

Don’t fret if you have a crowd to feed. A no-cook roux makes this luxuriously creamy mac and cheese a snap to fix.  All you’ve got to do is stir boiled macaroni into a mixture of flour, milk, and cheese then stick it in the oven–voilà! Dinner for ten!

Creamy Wild-Rice Soup With Smoked Turkey

Melt the butter and add carrot, onion, rosemary, black pepper, and garlic. Sauté until mixture has browned. Stir in broth, scraping pan to loosen browned bits. Then add turkey and rice and bring to a boil. Let it simmer till the rice is tender. Next, combine flour and milk in a small bowl and add to a pan. Cook this until it’s thick. Next, stir in some sherry and salt! It’s easier to make than the title sounds. Warm, wholesome soup, anybody?
