Delicious and Cheap Recipes for the End of the Year

A delicious meal to end the year does not mean breaking the bank. As a matter of fact, you can even finish the year with a bang with crowd-pleasing favorites that usher in the new year in all the right ways.

Roasted Sausage with Broccoli and Fennel

The show can’t start without a healthy and flavorful appetizer to get things going. This can even be a great side to your main dishes. 

Laced with whole-grain mustard, this adds a hint of spiciness and depth that will have everyone wondering just what ingredients went into making this dish. 

What You Need

At an estimated cost of $9.50 for the whole meal, this recipe can’t be beaten. 

To make this, you will need around 12 ounces of a type of sausage of your choice, two small heads of broccoli cut into florets, and a medium-sized fennel bulb cut into thin slices. 

For the dressing or marinade of sorts, you will need three tablespoons of olive oil, two teaspoons of whole-grain mustard, lemon zest and one teaspoon of juice from the lemon, and half a teaspoon of Aleppo pepper or red pepper flakes.

How to Prepare

All it requires is throwing in chopped broccoli and fennel together and season these together with salt and pepper. Place these in an oven-friendly baking dish and set aside. 

In a separate bowl, combine olive oil, mustard, lemon juice, lemon zest, and the Aleppo pepper. 

Coat the broccoli and fennel mixture with the sauce you have just made. Place the sausage on top and place this in the oven for 20 minutes at 425 degrees Fahrenheit or until the sausage is no longer pink. 

Toss halfway through cooking and you are all set. 

Roast Chicken with Potatoes

You can never go wrong with a roast chicken flavored with herbs and paired with a wonderful medley of potatoes and butternut squash.

What You Need

For this, all you’ll need is a 3.5-pounder whole chicken, minced garlic, dried rubbed sage, 12 ounces of red potatoes, butternut squash, and a bit of butter. 

How to Prepare

Preheat your oven to 400 degrees Fahrenheit. In another bowl, combine the herbs and spices such as garlic, salt, pepper, and sage. Move on to the chicken and remove giblets and the neck. Do all the necessary prep and rub the spice mixture all over. 

Place the chicken on a broiler pan with some cooking spray on it. Place it breast side up. Arrange the vegetables seasoned with garlic, salt, and pepper around the chicken. 

Allow it to bake for an hour. Use a thermometer to see if the meaty part inside reads 165 degrees Fahrenheit. 

Pot Roast with Vegetables

Heat up your cold winter nights with a pot roast complete with all the fixings. This simple and easy recipe only costs a total of $14 and it already makes a total of 10 servings. 

What You Need

These already include the rump roast you need, six potatoes, and a small bag of carrots. This can increase slightly to still under $20 when you add beef broth (or red wine) and onions.

How to Prepare

To allow the juices of the beef to fully come out, cook the rump with water until it is fully submerged. Cook this for around three hours until soft. Then, add the chopped potatoes and carrots, as well as salt and pepper to taste.

Cook this for another three or so hours. To help get the flavors going, you can also start by seasoning the rump with salt and pepper. Then, proceed by sauteeing onions in the pot. 

Remove these and cook until slightly brown before removing them again. Brown the meat and place this on another plate. 

Use some beef broth or red wine to deglaze the pot. Place the roast back in along with the veggies and aromatics. Cook for three hours until soft.
