Instructions
  1. In a large skillet, add 0.25 cup of shredded coconut and toast
  2. Separately in another pan, add 0.5 cup coconut milk, 1/2 cup water and 1 tablespoon freshly grated ginger
  3. when the liquid starts boiling, lower the flame to a simmer and cover the chicken until cooked and tender
  4. Remove the chicken and place in another plate
  5. Turn the heat to high flame and boil the mixture
  6. Lower the heat readd the chicken and coat with the sauce
  7. garnish with shredded coconut
