Instructions
  1. As soon as you put your turkey in the over, you can start working on the broth.
  2. Place a large saucepan over medium-low hear.
  3. Now melt the butter in the pan
  4. Once, the butter is heated, add onion and turkey neck and giblets.
  5. Stir and saute until they turn brown.
  6. Now, add the chicken broth, herb sprigs and bay leaf.
  7. Now cover and let it simmer while the turkey roasts for about 2 hours.
  8. Strain this and keep it warm. You can remove the neck and giblets if you want.
  9. Once, your turkey has been cooked, place it on a cutting board. Take the pan drippings and place into a degreasing cup.
  10. Now take about a half cup of the broth and pour into a roasting pan and scrap the brown bits with wooden spoon.
  11. Add this to the degreasing cup.
  12. Let the fat rise up to the top of the cup, then take a spoon and remove 1/2 cup fat and transfer it to a large saucepan over medium heat.
  13. Now, sprinkle the flour into the pan and cook. Make sure to stir constantly with a wooden spoon.
  14. Now slowly, add the hot broth while whisking constantly to remove lumps. Bring this to a boil and then reduce the flame to media low.
  15. Pour the dark juices from the cup into the gravy and throw away the remaining fat.
  16. . Simmer, whisking occasionally, until the gravy thickens, about 10 minutes. Add the Worcestershire sauce and season with salt and pepper. Stir in the flavored butter, if desired.
