Chef Floyd Cardoz Announces That He Plans To Open A New Restaurant In New York!

on

Last weekend, celebrated Chef Floyd Cardoz and cookbook author Padma Lakshmi took center stage at one of the sessions during the Times Litfest. While the two culinary stalwarts explored a variety of topics, one statement made the audience – especially the jetsetters – sit up poker straight; Cardoz announced that he will be opening an eatery in New York City.

However, while many high end Mumbai restaurants use inspiration from restaurants in the West – such as the farm to table dining concept, Cardoz will be taking ideas from The Bombay Canteen in Mumbai, of which he is the culinary director, and applying them to his upcoming restaurant in New York.

The Bombay Canteen, which was started this year is a contemporary Indian restaurant, which calls itself Mumbai’s favourite ‘adda’. It has been praised for its innovative take on Indian cuisine and its commitment to highlighting seasonal and local produce; a commitment which Cardoz hopes to replicate in his new restaurant.

Chef Cardoz is no stranger to the restaurant scene in New York; he’s been involved with a variety of restaurants including the high end North End Grill which focuses on seasonal produce and seafood, Verano Taqueria, a Mexican eatery that caters to stadiums and Tabla, which featured New Indian cuisine but shut shop in 2011.

So, with his expertise and memories of great meals at The Bombay Canteen playing in Mumbaikars minds, it’s not hard to understand why the announcement was met with jubilance. Just another reason to book yourself a ticket to New York in the coming years!
