Cakes are delicious and so are fruits. Fruit cakes are even more delicious. But nothing beats a classic pineapple upside down cake. ‘Why is it called an upside down cake?’- non-bakers will always ask. It’s because these cakes are made top layer first. As in, you layer the fruit and caramel first and then put in the batter so that when your cake is all baked and ready you turn it over on to a plate and serve. The top side of the cake goes down and thus the name Upside Down cake. Now if you have had a chance to eat this cake before you’ll know that the perfect cake has caramelised fruit on top and a moist and fluffy sponge base. Of course, you can switch to another fruit if you don’t prefer pineapple but the recipe and method remains the same.
